These are big white solid heads that look a lot like broccoli. Some may have a pink blush from the sun. Romanesco cauliflower tastes very similar but are instead a vibrant green and form intricate pointed florets.

With luck, you’ll find cauliflower for 1 week in the spring and then several weeks in the fall, though we are adventurously trying for a longer season since our weather has been so cool in the spring!

Carrots are one of the most versatile vegetables, good cooked almost every way, as well as enjoyed fresh or raw. They can range from less sweet/more carroty flavor up to a candy-like sweetness.

How to Handle and Store:

Keep your cauliflower loosely wrapped in a bag in your crisper drawer. It is best eaten in the first 3 to 5 days. It can store longer, but might start getting a bit spotty. It’s still edible and tasty with spots, but less visually appealing.

How to Prep for Use:

Gently wash as you pull apart the florets. It cooks more quickly if cut into small pieces. It can also be minced, riced, cut into large pieces, or left whole.

Ways to Cook and Eat:

Everyway! Cauliflower is super versatile and a farmer favorite veggie. It's also super en vogue now because it's low carb and paleo, and can be substituted into loads of recipes (like pizza crust or rice!)

Quick and Dirty Hangry Farmer Go-To Preparations:

We love cauliflower most ways, but usually eat it raw (dipped in hummus or other sauces) or roasted. I prefer to toss it with olive oil and curry powder and salt and roast that way, but I also love cauliflower "rice." There are so many new ways to cook it online--we have yet to find a way we don't like it!

Typical time to:

  • Steam—3 to 15 minutes, depending on size and consistency

  • Sauté—5 to 15 minutes, depending on size and recipe

  • Bake—20 to 45 minutes, depending on size and recipe

  • Boil—5 to 7 minutes, although we don’t prefer this method
